Fingerling Potatoes With Buttermilk Dressing

I always look for these potatoes when shopping for produce. They are luscious, creamy and, in fact, just plain yummy. Try this….even  your kids will love them.

 

  • 1  1/2 lbs. fingerling potatoes
  • 2 tbsp. fresh dill, chopped
  • 2 tbsp. fresh parsley, finely chopped
  • 1/4 cup Buttermilk Dressing (recipe follows)

Boil the potatoes until cooked (about 14-15 minutes). Strain, cool and cut lengthwise. In a large bowl simply combine with the following dressing.

 

Buttermilk Dressing

  • 1/4 cup creme fraiche
  • 1/4 cup buttermilk
  • 1 tbsp. grainy mustard

Whisk together until smooth and mix with the potatoes.

Now that was simple, but the flavour is over the top. Totally yummy! This is a wonderful salad on the patio , barbecue going and sharing a glass of wine with friends.

 

Divine Croissants

This is a savory breakfast and a nice change fromthe usual sweet fare.

 

  • 4 large croissants, cut 3/4 through, lengthwise
  • 4 tbsp. butter
  • 8 large eggs
  • 1/2 – 3/4 cups cream
  • 1 tbsp. minced fresh dill
  • 1/2 cup finely chopped button mushrooms
  • 1/3 cup finely chopped salmon
  • 3/4 cup shredded Gruyere cheese

Preheat oven to 225 degrees and warm the croissants for about 5 minutes.  Melt the butter in a skillet.  In a bowl  beat the eggs and cream together.  Add the dill, mushrooms and salmon.

Pour into the skillet and scramble until almost dry.  Fill the croissants with the egg mixture and sprinkle the cheese over the top.  Broil the croissants open-faced until the cheese is bubbly.

Serve immediately with a slice or two of fresh fruit and  a fresh,  hot cup of coffee and the world looks all anew.

Cod With Lemon and Shallots

Time to eat healthy before the big Christmas feast and leftovers on Boxing Day. Try this one.

Serves 4

 

  • 1/4 cup butter (okay, margarine if you must)
  • 1 tsp. shallots chopped fine
  • 1 tsp. fresh parsley, chopped fine
  • 1 tsp. fresh dill, chopped fine
  • 1/4 tsp. dry mustard
  • 1/4 tsp. fresh lemon juice
  • 1/8 tsp. minced garlic
  • 4 cod fillets (roughly 6 oz. each)

In a small bowl, mix all the ingredients, except the fillets, and set aside in the refrigerator until ready to use.

Broil or bbq the fish for about 4-5 minutes each side.  When ready to plate, drizzle the seasonings over the top.  Add a vegetabe of your choice and some rice.

Great dinner. Great Light dinner. It is a win-win situation.
