Braised Red Cabbage

This is a great complement for game or even  holiday turkey.

 

  • 2 tbsp. butter
  • 1 tbsp. vegetable oil
  • 1 cup, finely chopped red onion
  • 1 large red cabbage, cored and thinly sliced
  • 1 bay leaf
  • 3 cloves
  • pinch of salt and pepper
  • 1/2 cup good red wine (full bodied)
  • 1/4 cup red wine vinegr
  • 2 tbsp. dark brown sugar
  • 1/2 cup grated apple
  • 1/4 cup red currant jelly

Heat the butter in a heavy saucepan and saute the onions until softened  (about 2 minutes). Add the cabbage and saute until coated with the oil. Add the bay leaf, cloves and allspice and season with salt and pepper.

Pour in the wine and vinegar and sprinkle in the brown sugar. Toss together and bring to a boil, stirring only occasionally.

Turn the heat to low, add the apples , over and cook for 1 hour, stirring occasionally. If you need to, add water to prevent sticking. Add the jelly and cook a further 20 minutes covered.

Taste and adjust the seasonings if you need to.

Ketchup-Homemade

This is summer….lots of hot dogs and hamburgers on the bbq. If you run out of the commercial stuff, make this one up. It’s good.

 

  • 1/2 cup tomato paste
  • 1/4 cup water
  • 1/8 cup vinegar
  • 1/8 tsp. cinnamon
  • 1/8 tsp. cloves
  • 1/8 cup sugar
  • 1/8 tsp. onion powder

Mix together in a small saucepan and bring to the boil. Remove from heat and put into a small container. This only makes 1/2 cup, so you may want to double, triple etc all the ingredients, after you try the first lot.

My Perfectly Good Husband’s Ham Glaze

You gotta know my “PERFECTLY GOOD HUSBAND”  is a great cook. This is his glaze for ham and everyone who has tasted this has wanted the recipe. Here goes:

 

  • 1 cup apple jelly
  • 1 tsp. ground cloves
  • 1/2 tsp. ground ginger
  • 1 tbsp. honey
  • 2 tbsp. cornstarch mixed with 1/4 cup cold water

Put the ingredients,  except the cornstarch and water, in a small saucepan and, stirring to combine, bring to a simmer and make sure it is smooth.  Bake the ham according to instructions and remove from the oven. Score the fat on the ham. (yes, this is unusual)..Now pour the glaze over the ham and bake for 20-30 minutes longer at 325 degrees.

Thicken the sauce with the cornstarch and drizzle over the sliced ham and keep the remaining sauce in a gravy boat. EVERYONE will want more.

 

 

Raspberry/Blackberry Soup

We had a big dinner for the management team that built our house and we served this soup. We still hear them talking about it – in a good way!

 

  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 1 cup water, divided
  • 1/2 cup whipping cream
  • 1 cup white cranberry juice
  • 3/4 cup sugar
  • 3 whole cloves
  • 1 cinnamon stick
  • 1 tbsp. lemon juice
  • 8 oz. raspebrry/cranberry yogurt (fabulous)
  • 1/3 cup sour cream
  • powdered cinnamon

Put the berries and 1/4 cup of water in the blender amd puree until smooth.  In a large saucepan combine pureed fruit with remaining water, cranberry juice, sugar, cloves and cinnamon stick.  Cook over medium heat until mixture begins to boil. Remove from heat and cool.

Strain soup into a large bowl (this will take a few minutes, so be patient).  Add the lemon juice and yogurt, whisking until well blended. Cover and refrigerate until very cold.

When ready to serve, add a dollop of sour cream in the center and a light sprinkle of powdered cinnamon.

This is another fabulous cold soup and a great change of pace for the taste buds.
