Pumpkin Pie

  • This will make two pies…one for company and one to keep for yourself.


You will need:

  • 4 eggs
  • 1 can 796 ml pure pumpkin
  • 2 cups packed brown sugar
  • 2 tsp. cinnamon
  • 1 tsp. ground nutmeg
  • 1/2 tsp. ground ginger
  • pinch of salt
  • 1   1/2 cups  evaporated milk
  • 1/4 cup rum (or add another 1/2 cup of the evaporated milk instead)
  • 2 unbaked pie shells 9″

Beat eggs until light and frothy. Add all the ingredients and beat  until smooth and well blended.  Make sute you have anough pastry to cut out a heart and place in the center of the pies. Bake in a 425 oven for 15 minutes. Reduce the temperature to 350 and continue baking for another 30-35 minutes. Test with a knife in the center to see if it comes out clean.  Cool.

When ready to serve,  add a dollop of whipped cream and a sprinkle of cinnamon.
